  • 5 cloves garlic, peeled and finely sliced
  • 2 cayenne peppers
  • 2 cups large button mushrooms, sliced
  • 1⁄2 cup olive oil
  • 1⁄3 cup white wine
  • 1 cup parsley, roughly chopped

Instructions
 

  • Heat the olive oil over medium heat in a frying pan or skillet.
  • Add the garlic and cayenne peppers and stir-cook until fragrant and garlic is slightly golden.
  • Add the mushrooms and stir; add a pinch of salt and the wine. Cook for 4–5 minutes until the wine is reduced and well absorbed by the mushrooms.
  • Serve with caramelized onions and scrambled eggs.
