Ingredients
  

  • 5 cups cornflour
  • 1 cup all-purpose flour
  • 1⁄3 cup extra virgin olive oil
  • 2 cups warm water
  • 2 packets yeast
  • 1 1⁄2 teaspoons salt
  • 1 1⁄2 teaspoons sugar

Instructions
 

  • Combine the cornflour, wheat flour, yeast, salt, and sugar in a mixing bowl (preferably the bowl of a stand mixer).
  • Add the oil, and begin to mix. Add the water gradually, and knead for 10 minutes, until a smooth, elastic ball is formed. Add a little more water if necessary.
  • Cover, and let it rest in a warm place for about an hour.
  • Preheat the oven to 400°F.
  • Knead the dough gently to remove any bubbles, and form it into a round loaf. Cut a cross on the top.
  • Bake for 40–45 minutes, or until the loaf sounds hollow when you tap on the bottom. Cool, and serve!
