Ingredients
  

  • 1 1⁄4 cups water
  • 3-4 cups vegetable oil for frying
  • 1 cup white flour
  • 2 tablespoons butter
  • 2 tablespoons granulated sugar
  • Pinch of salt
  • 1⁄4 teaspoon baking powder
  • 4 eggs
  • Powdered sugar for dusting

Instructions
 

  • In a small saucepan, combine the water, butter, lemon zest, lemon juice, salt, and sugar. Bring the mixture to a boil.
  • As soon as it boils, stir in the flour and baking powder. Stir briskly with a wooden spoon until the dough comes away from the sides of the pot. Set it aside to cool for 5–10 minutes.
  • One at a time, stir in the eggs. Mix until smooth, and then allow the batter to rest for 1 1⁄2 hours.
  • Heat 2 inches of oil in a thick-bottomed pan. When it reaches 375°F, begin to drop rounded spoonfuls of the batter into the oil. Turn when they are golden on the bottom. When they’re done they should float.
  • Remove the bunuelos to a paper towel to drain. While they are still hot, toss them with powdered sugar and serve.
