Ingredients
  

  • Juice of 1 lemon
  • 4-5 ounces pork fillets
  • 2 cloves garlic, minced
  • 1 1⁄2 tablespoons dried parsley
  • Pinch of salt
  • 1⁄4 pound Gruyere cheese, sliced into 1⁄2-inch-wide sticks
  • 1⁄4 pound Jamón Serrano
  • 1⁄4 pound breadcrumbs
  • Flour
  • 2 eggs, beaten
  • Olive oil to fry

Instructions
 

  • Place the pork fillets between plastic sheets and flatten them to 1⁄4 inch thick using a meat mallet.
  • Transfer the pork fillets to a mixing bowl. Add the garlic, parsley, lemon juice, and salt; stir and refrigerate for 1–2 hours to marinate.
  • Lay the pork fillets out flat and top with a thin layer of Jamón Serrano.
  • Add the cheese sticks.
  • Roll into logs around the cheese sticks such that the outer layer is pork.
  • Roll the logs over a lightly floured surface and then coat evenly with beaten egg. Finally, coat with breadcrumbs.
  • Add 1⁄4 inch of oil to a deep frying pan and heat over medium heat until shimmering.
  • Place the logs in the oil open side down and cook until evenly golden and cheese become gooey. Drain over paper towels.
  • Serve with French fries and/or garden salad.
