- 1⁄4 cup unsalted butter
- 1⁄4 cup olive oil
- 1 cup flour
- 1 quart whole milk, at room temperature
- Pinch of nutmeg
- Flour
- 1⁄2 pound Jamón Serrano, diced
- 2 eggs, beaten
- Panko breadcrumbs
Heat the olive oil and butter over medium heat in a medium saucepan or skillet.
Add the onion and stir-cook until softened and translucent.
Add a pinch of salt and nutmeg; mix in the diced ham and stir-cook for 30 seconds.
Mix in the flour and cook until light brown, stirring continuously.
Gradually mix in the milk. Set aside to cool.
Butter the sides of a large bowl; add the dough, cover, and refrigerate for 4 hours or overnight.
Shape the dough into little logs.
Coat evenly with flour and then dip in beaten egg. Finally, coat with breadcrumbs.
Add enough olive oil to fry the croquettes to a deep frying pan and heat over medium heat until shimmering.
Add the croquettes one by one and fry until evenly brown.
Drain over paper towels. Serve warm.
If you want to prepare these croquettes in advance, you can freeze them after shaping and breading. Place them on a baking sheet lined with parchment paper and freeze until solid. Then transfer them to a freezer-safe container or bag. When ready to enjoy, simply fry them straight from frozen, adding a few extra minutes to the cooking time.
