Ingredients
  

  • 1 small (1⁄2 pound) cucumber, peeled and seeded
  • 2 pounds ripe Roma tomatoes, halved and cored
  • 1⁄2 small red onion, peeled
  • 1⁄2 teaspoon ground cumin
  • 1⁄2 teaspoon black pepper
  • 1 medium green bell pepper, cored
  • 2 small cloves garlic (or 1 large clove), peeled
  • 2 tablespoons sherry vinegar
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1 crustless white bread, soaked
  • Optional garnishes chopped fresh herbs, homemade croutons and/or a drizzle of olive oil

Instructions
 

  • Add all ingredients to a blender or food processor and blend to make a semi-smooth mixture.
  • Season to taste with cumin, salt, and pepper.
  • Refrigerate for 3–4 hours until completely chilled.
  • Serve chilled with garnishes of your choice.
