Ingredients
  

  • 2-3 small eggplants, cut into bite-sized pieces
  • Salt and pepper to taste
  • Milk
  • Honey or molasses
  • Flour
  • Olive oil

Instructions
 

  • Add the eggplant, a pinch of salt, and some milk to a mixing bowl. Mix well. Soak for an hour. Drain and season with salt and pepper.
  • Coat the eggplant with a bowl of flour.
  • Add enough olive oil for frying to a deep frying pan and heat over medium heat until shimmering.
  • Add the eggplant pieces one by one and fry until evenly brown.
  • Drain over paper towels. Season with a pinch of salt.
  • Drizzle with honey or molasses. Serve warm.
